Stir through the yogurt, mayo, lemon juice, and veg when pasta is cool. Spoon into the lunchbox and put across the cooked chicken or protein of your choice.

Easy Egg muffins

Step 1

Heat oven to 200C/180C fan. Brush half the oil in a muffin tin. Heat oil in the frying pan and now add broccoli, pepper, and spring onion. Fry for about 5- 6 minutes. Set aside to cool.

Step 2

Whisk egg with milk, smoked paprika, and cheese in a bowl. Add cooked veggies to it, pour the egg mixture into muffin holes, and top each with remaining cheese if you like. Bake for about 15-20 minutes until golden brown and cooked through.

Cheesy black beans quesadillas

Step-1

Hold the sieve in the sink and tip in the beans. Let the liquid drain off completely.

Step-2

Mash beans with a potato masher to make a lumpy mixture.

Step-3

Place the box grater on the chopping board and grate the cheese. You can now add cheese to the mashed beans/

Step 4

Peel the papery outer skins of spring onion. Snip the onions into small pieces the size of peas and add to the mixing bowl.

Step 5

Add coriander to small pieces, and don't forget to use the stalks, too, as they contain a lot of flavor.

Step 6

Use a teaspoon to measure ¼ tsp ground cumin and ½ tsp paprika, and add these to the bowl. Season the ingredients well with salt and pepper and mix everything together.

Step 7

Place wrap on your board, and scoop half the bean mixture from the bowl onto half of the wrap. Spread it out in an even layer, and make sure you only cover one side of it. Close the wrap to cover the filing inside and make a semi-circle. Do the same with the remaining wraps and the rest of the fillings.

Step 8

Put a medium-sized frying pan on the hob. Lift one of the wraps into the pan, then turn the heat from low to medium. After 3 minutes, lift the wrap and check underneath. If it is golden brown, it's time to turn it over and cook till it's golden brown too. Once done, turn off the heat and slide the quesadilla onto the chopping board. You can now cut the pizza cutter or knife into wedges.
